What I'm Eating... Spinach Lasagna

Okay, so I'm Italian... but I've never made lasagna.  From what I can remember, my aunt totally brought frozen lasagna to the table, so I'm not alone in this shame!  But I finally took the plunge, and as it turns out, it isn't that difficult, and it tastes waaaaaay better than the frozen kind (obviously, I'm sure).

Ingredients:
Lasagna noodles, fresh spinach, tomato sauce, cottage cheese (great substitute for ricotta!), Parmesan cheese, shredded mozzarella cheese, olive oil

Decorate, Eat & Repeat
This was the first time I saw my 'fella happily eating leftovers -- it really is one of those dishes that tastes even better on the next day!  It served us well for dinner, then lunch, then dinner again.  I think there are still two pieces in the fridge, now...

I served it with Caesar salad, and bread with butter.
