Portobello mushrooms always surprise me -- they're so, well, meaty! They make eating vege a little easier on me, when my 'fella usually only has one question about dinner, "Is there meat?"
Corn tortillas, portobello mushrooms, Jack cheese, and a lil' salt & pepper.
Roasted corn, avocado, scallions, and a lil' more salt & pepper. :)
